There are many misconceptions about how to cook mushrooms. They are often overcooked, losing much of their flavor. First, keep the mushrooms dry. Do not rinse them. They should be perfectly clean and ready to eat if you bought them from a local farmer. If they have dirt or sawdust, brush them lightly with a kitchen brush or a towel.
Slice fresh mushrooms.
Heat a wide cast iron pan.
Add mushrooms to the dry, hot pan in one layer or close to it. As they cook, they release their juices and cook in their own liquid, concentrating the flavor of the mushrooms. The single layer allows them to brown rather than steam. Let them cook until they brown, about 3-5 minutes, and then stir them to cook on the other side.
Add oil or butter, salt, and pepper to taste, and cook a few more minutes until done. You can add garlic, thyme, or other desired herbs at this step.
Turn off the heat.
Serve (Optional - squeeze fresh lemon before serving)
